This is a great warm weather sauce or dip to serve with veggies, or zucchini fritters or to slather on lamb burgers!

Prep time: 15 mins Yields: 3 cups sauce
- 3/4 English cucumber, partially peeled (striped) and sliced
- 1 t kosher salt, divided
- 4-5 garlic cloves, peeled, finely grated or minced (to taste)
- 1 t white vinegar
- 1 T Extra Virgin Olive Oil
- 2 cups greek yogurt
- 1/4 t ground white pepper
- Warm pita bread for serving, and/or cold veggie strips
- Prep the cucumber. In a food processor, grate the cucumber. Toss with 1/2 t kosher salt. Transfer to a fine mesh strainer over a deep bowl to drain. Spoon the grated cucumber into a cheese cloth or double thickness napkin and squeeze dry. Set aside briefly.
- In one large mixing bowl, place the garlic with remain 1/2 t salt, white vinegar, and EVOO. Mix to combine.
- Add the grated cucumber to the large bowl with the garlic mixture. Stir in the yogurt and white pepper. Combine thoroughly. Cover tightly and refrigerate for a couple of hours.
- Serve with pita bread, veggies and/or use as a sauce on your lamb burgers!
