I learned this recipe from my sister, Jayne, who is a great cook. This dish goes well with just about anything, I like it salmon, or by itself with some rice or a salad. I love the aromas from the curry and turmeric as it’s roasting. This recipe is also a “to taste” recipe, where you should add however much of the spice you want.
Preheat the oven to 400 degrees. In a large mixing bowl, combine the following, to taste:
- One large cauliflower head, broken into small bite sized pieces
- A couple of glugs of olive oil (use plenty)
- Salt and pepper
- Curry powder, turmeric, cumin, red pepper flakes
Place on a large baking sheet and roast until crispy but tender.
