Cathy: What’s for dinner in Oklahoma? Beef, of course!
Funny story about my experience in Oklahoma – way back in the day, I was new to my regional training position with a large training company. It was my first week on the road on my own and I was scheduled to train classes in Tulsa OK, then drive to Fort Smith AR, then to Little Rock AR, then fly home. I flew into Tulsa OK and went to the rental car counter to rent my car, which would take me to my future destinations. I was told by the customer service agent that they couldn’t rent me a car because my license had just expired. 😳 😫 For fear of failing at my new job, I quickly looked into alternate transporation modes, IE: train (nope), bus (nope), flights (ah, nope)….Anyway, long story short, I was glad to have an extra full day in Tulsa before my training class because I went to the DMV, took a driving test, gave them the hotel address and got myself an Oklahoma drivers license! I was so happy to return to the rental car office and slap that license down on the counter to get my rental car! Crisis averted and to this day, I proudly carry my OK license with me as a reminder to be a better planner!
As for beef brisket, I got this recipe from dear friends who used to live in OK. Betty passed this recipe to me via church friends of theirs a while back. The recipe is “extremely simple and very good. The cola or Dr Pepper or Pepsi acts as a meat tenderizer. It’s very typical for that area of the country”. Originating from Dolphine Keenum, a “very talented cook at our United Methodist Church in Tulsa”. Dolphine began cooking a the age of 12 and was often given the responsibility for preparing dinner for her family of 4 sisters and a brother”.
And I’m lucky if I can manage to have an up to date drivers license. 😳 😛
I hope you enjoy this as much as we did! We had brisket sandwiches for days!
Takes 6 hours to cook in the oven, then better to sit overnight in the refrigerator and re-heat the next day.
- 3-6 lb beef brisket
- Salt, pepper
- Garlic powder
- Onion powder
- 1/2 cup barbeque sauce
- 1/2 cup cola (Coke, 7-up, Dr. Pepper, Pepsi)
- 1 Tbs Liquid Smoke
- 1 Tbs Worcestershire sauce
- Sprinkle meat with salt, pepper, garlic and onion powder.
- Put meat on heavy duty foil in a large roaster pan or 13 x 9 pan.
- Mix together the BBQ sauce, cola, liquid smoke and worcestershire sauce and pour over the meat. Cover with foil. The meat should be completely enclosed with foil.
- Cook at 200 degrees for approximately 6 hours.
- Let cool and refrigerate overnight.
- Remove all fat, slice the meat, put in back in the pan, cover with the sauce and reheat.
